Ingredients

  • 1/4 c butter
  • 2 c finely chopped onions
  • 12 large carrots,sliced
  • 4 c chicken broth
  • 1 c orange juice
  • Salt and pepper to taste
  • Grated orange zest

Preparation

Step 1

Melt butter
Add onions and cook over low heat
Add carrots and broth
Bring to a boil
Reduce heat,cover and cook until carrots are very soft approx 30 min)
Pour through strainer
Reserve broth
Add vegetables to blender and puree
Add orange juice and reserved broth
Add orange zest,salt and pepper and reheat
