- 6 medium sweet potatoes or yams (2 pounds)
- 1/3 cup packed brown sugar
- 3 T's butter
- 3 T's water
- 1/2 t salt

Step 1
1. scrub clean the potatoes, but do NOT peel 2. Place in sauce pan - 3 qt size and add enough water to just cover. Heat to a boil; reduce heat to low. Cover and simmer for 20 -25 minutes or until tender. Drain, cool slightly and slip off the skin. Cut into 1/2 inch slices 3. Heat remaining ingredients in a 10 inch skillet over medium heat, stirring occasionally, until smooth and bubbly. Add in the potatoes and gently stir until glazed and hot. Substitute: canned potatoes - 1- 23 oz can, drained and cut into 1/2 inch slices. Or - omit three T's of water and add 8 oz can of crushed pineapple in syrup complete (do not drain)
