Ingredients
- 2 tablespoon(s) olive oil
- 2 medium (about 8 ounces) Yukon gold or white potatoes, peeled and cut into 1/4-inch pieces
- 1 pound(s) (about 5 links) sweet Italian sausage, casings removed
- 1 medium onion, finely chopped
- 2 teaspoon(s) paprika
- 1/2 teaspoon(s) ground cumin
- 1/2 teaspoon(s) dried oregano
- 1/2 teaspoon(s) chili powder
- Kosher salt
- Pepper

Preparation
Step 1
Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add the potatoes and cook, tossing occasionally, until golden brown and tender, 7 to 8 minutes; transfer to a small bowl.
Add the sausage, onion, and remaining tablespoon oil and cook, breaking it up with a spoon, until the sausage is browned and cooked through and the onion is tender, 10 to 12 minutes. Add the paprika, cumin, oregano, chili powder, and 1/4 teaspoon each salt and pepper and cook for 1 minute. Return the potatoes to the skillet and toss to combine.
