Italian Tomato Chicken (crockpot)

Ingredients

  • 1 26 oz. can of spaghetti sauce
  • 1 can crushed tomatoes
  • 1 cup chopped mushroom, white, button or portobella
  • 1 lb. boneless, skinless cubed chicken breast
  • 1 8 oz. bag of mozzarella cheese
  • 6 peeled red skin potatoes, cubed
  • 1/2 diced onion
  • 1/2 cup chicken broth
  • 1 Tbsp fresh chopped basil
  • 1 cup shaved Parmesan cheese

Preparation

Step 1

Combine all ingredients except mozzarella and Parmesan in crock pot and stir to mix. Cook on LOW 6-8 hours or HIGH 4-5 hours. 1/2 hour before serving, add 1/2 of the mozzarella and stir. Top with remaining mozzarella and Parmesan to serve.
