Okey Dokey Artichokey Dip

Ingredients
- 10 oz. frozen chopped spinach
- 1 1/2 c. onion, finely chopped
- 4 T. olive oil
- 1/4 t. basil
- 1/4 t. oregano
- 1 (14 oz.) can artichoke hearts, drained
- 1/4 t. salt
- 1/8 t. pepper
- 1/4 c. cream cheese
- 1/4 c. sour cream
- 4 oz. shredded cheese, Mexican blend
- 2 oz. Parmesan cheese

Preparation
Step 1
Cook the spinach according to the package. Drain the spinach and cool; set aside. In a fry pan, saute the onions in the olive oil with basil and oregano until tender; set aside. Finely chop artichoke hearts and add to the spinach along with the onions, mix together. Add the cream cheese and blend. Add the remaining cheese except the Parmesan cheese. Spoon into a 13 x 9 inch baking dish. Cover and refrigerate. When ready to serve sprinkle with Parmesan cheese. Cover and heat in microwave until bubbly hot.
