Ingredients

  • FILLING:
  • 1 1/4 c. flour
  • 1 1/4 c. quick cooking oatmeal
  • 1/2 c. sugar
  • 3/4 c. melted butter
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 2 tsp. vanilla
  • 10 oz. jar apricot preserves
  • 1/2 c. flaked coconut

Step 1

Grease 13 x 9 inch baking pan. Combine all crumb mixture ingredients.
Beat at low speed until mixture is crumbly. Reserve 1 cup of mixture for
top. Press remaining mixture into greased pan. Spread preserves to
within 1/2 inch from edge of pan. Sprinkle with reserved mixture and
flaked coconut. Bake near center of 350 degree oven for 22 to 27
minutes or until edges are lightly brown. Yield: approximately 3 dozen
bars.
