Stove Top Ground Turkey Lasagna

Ingredients

  • 1 lb ground turkey
  • 1 medium onion
  • 3 minced garlic cloves
  • 1 jar of “no salt added” tomato sauce (I just used my favorite pasta sauce – its called “All Natural Marinara Sauce” from Costco – it has no preservatives or added sugar)
  • 1 tbsp basil leaves (dried)
  • 1 tsp oregano
  • 1 tsp salt
  • 1 1/4 cup water
  • 2 1/2 cups of broken lasagna noodles (whole wheat)
  • 1 cup fat free cottage cheese
  • 1/4 grated parmesan cheese
  • 1 egg
  • Mozzarella fat free cheese (shredded) – I didn’t use the mozzarella and it still tasted great

Preparation

Step 1

In a large skillet, brown turkey with onions and garlic.
Add water, tomato sauce, parsley, basil, oregano, and salt.
Stir in uncooked pasta.
Bring to a boil, stirring occasionally.
Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
Combine cottage and Parmesan cheeses.
Mix in the egg.
Sprinkle in basil and pepper to taste.
Drop cheese mixture by rounded tablespoons onto pasta mixture and stir gently.
Cover and cook for 5 minutes more.
Sprinkle with shredded mozzarella and serve.
