Step 1

Take a about 4 lb whole chicken. Then in a bowl mix 2 tbsp softened butter, 3 minced garlic cloves, 1 tsp minced rosemary, 1/2 tsp minced thyme, zest from one lemon, salt and pepper. Pat chicken dry. Stuff with 1 half of an onion and 1 half lemon wedges. Rub the herb mixture all over the chicken and pull skin aside and rub under skin. Set chicken in roasting pan an dpour 1 1/2 c chicken stock on pan and add 1/2 cut onion and 1/2 lemon wedge. Place chicken in preheated 350 degree oven and roast for 1.5 hours, basting every 20 minutes with pan juices. Roast to internal 165 degrees and remove from oven and let rest 10 mintues after foil tenting.
