  • 1 1/2 cups water
  • 1/2 cup granulated sugar
  • 6 tbsp. brandy
  • 1/2 vanilla bean, split lenghtwise
  • 4 medium peaches ripe but firm. halved and pitted
  • 1/2 cup Vanilla ice cream

Preparation

Step 1

1. Combine water,sugar and brandy in a medium deep saucepan. Scrape seeds from vanilla bean into pan; add vanilla bean. Bring to a boil over medium heat, stirring until sugar dissolves. Boil syrup for 1 minutes. Add Peaches to syrup. Partially cover pan and simmer until peaches are tender. turning occasionally, about 15 minutes. Cool, ( Can be prepared 1 day ahead. cover and refrigerate. Recipe can be doubled)
2. Remove peel from peaches. To Serve; arrange peach halves in glass bowls. Spoon syrup over peaches. Fill each peach cavity with 1 -2 tbsp vanilla ice cream
