Wonderful traditional cranberry relish with hints of orange and pineapple.

Ingredients
- 1 small to medium orange, quartered
- 1 lb. fresh or frozen cranberries
- 1 1/2 cups sugar
- 1/2 cup apricot preserves
- 1 (8 oz.) can crushed pineapple, drained
- 2 Tablespoons lemon juice
- 1/2 envelope Knox gelatin, as needed

Step 1
Combine cranberries and sugar in a heavy saucepan. Cook and stir over medium heat until cranberries just begin to pop, about 10 minutes.
While cranberries cook, finely chop the orange the orange in the food processor.
When cranberries start to pop transfer to a bowl, add apricot preserves and gelatin; mix until melted. Stir in pineapple, orange and lemon juice. Cover and refrigerate until well chilled.
