Ingredients
- 10 cups grated zucchini
- 4 cups chopped onions
- 2 red peppers, chopped
- 5 tsp salt
- 5 cups sugar
- 2 3/4 cups vinegar
- 1 tsp celery seed
- 1 tsp black pepper
- 1 tsp nutmeg
- 1 tsp ground mustard
- 1 tsp turmeric
- 1 Tbsp cornstarch

Preparation
Step 1
Combine zucchini, onions, and peppers and sprinkle with salt. Let stand overnight.
Drain vegetables, rinse, and drain again. Add sugar, vinegar, celery seed, pepper, nutmeg, mustard and turmeric. Mix all together and cook 1/2 hour until juices look clear. Then add cornstarch mixed in a little water and boil again. Put in clean jars.
