Cheesy Deviled Spinach

This is the best spinach side dish! The seasonings and cheese complement the frozen spinach perfectly. If you like spinach you must give this one a try. It can also be used as a spinach dip served with some toasted French bread rounds or crackers.

Ingredients

  • 1 (12-ounce) bag frozen spinach, chopped
  • 2 1/2 tablespoons unsalted butter
  • 1/4 cup onion, finely diced
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk
  • 1/4 -to 1/2 teaspoon ground cayenne pepper, optional
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon salt, or to taste
  • Scant 1/2 teaspoon dry mustard
  • 2 to 3 drops Worcestershire sauce
  • 1 cup sharp cheddar cheese, grated

Step 1

Pour spinach into a colander to thaw completely; when thawed, press down lightly on it to remove excess liquid. Set aside.

Preheat oven to 350°F. Lightly grease a small (1-quart) baking dish and set aside.

In a medium saucepan, melt butter over medium heat; add the onion and saute while stirring for about 2 minutes. Whisk in flour; stir and cook for 1 minute. Whisk in the milk and cook and stir until thickened.

Remove from heat and stir in the cayenne pepper, black pepper, garlic salt, salt, dry mustard, and Worcestershire sauce. Gently stir in spinach and cheese, just until incorporated with the other ingredients. Pour into the baking dish.

Bake for 25 to 30 minutes, or until bubbly and slightly browned around the edges and cheese is completely melted.
