Caramel Apple Streusel Cheesecake Tarts

Ingredients
- CRUST:
- 1 1/3 cup graham wafer crumbs
- 2 1/2 Tbsp sugar
- 6 Tbsp melted butter
- STREUSEL TOPPING:
- 1/2 cup flour
- 1/4 cup oats
- 1/4 cup + 2 Tbsp brown sugar
- 1/4 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup softened butter
- CHEESE CAKE FILLING:
- 16 oz cream cheese (2 blocks)
- 2/3 cups sugar
- 2 eggs
- 1 tsp vanilla
- 1 lb apples (4-5) (Peeled, cored and cut into small pieces).
- TOPPING:
- 20-25 caramels

Preparation
Step 1
Preheat oven to 325 degrees
Line 18-20 muffin tins with cupcake liners
Make streusel first:
1) To the softened butter stir in oats, brown sugar, cinnamon and salt
2) Stir until clumps form
3) Put in refrigerator while you make the filling.
CRUST:
1) Mix crumbs, sugar and melted butter
2) Divide mixture into the cupcake liners
3) Press down firmly
4) Bake for 5 minutes and let cool
FILLING:
1) Beat cream cheese until fluffy
2) Add eggs, sugar and vanilla and continue to beat
3) Pour batter into cupcake liners
4) Top with apples
5) Sprinkle on the streusel toppin
Bake for 20-25 minutes.
Cool and chill in fridge for 2 hours
Melt the caramel with a small amount of milk and pour over tarts.
Refrigerate until serving.
