Ingredients

  • Topping:
  • 1-3 \4 c flour
  • 1 tbsp. pumpkin spice
  • 1 tsp. baking soda
  • 1 \2 tsp. salt
  • 1-15oz can pumpkin (pure pumpkin puree)
  • 1 c sugar
  • 1 \2 c packed brown sugar
  • 2 lg. eggs
  • 1 \2 c vegetable oil
  • 1 tbsp. vanilla
  • 8 oz cream cheese
  • 1 \4 c sugar
  • 1 lg. egg
  • 2 tbsp. vanilla

Preparation

Step 1

Preheat oven to 375 degrees
Place liners in a muffin pan
Whisk flour, pumpkin spice, baking soda & salt until well combined, set aside
In another bowl whisk pumpkin, sugar & brown sugar
Beat in eggs, vegetable oil & vanilla, slowly whisk in the flour mixture until there are no lumps, fill muffin to s3\4 full
Beat cream cheese until smooth add sugar, egg yolk and vanilla & beat until well combined
Ipeach muffin with about 1 tbsp. of cream cheese mixture use a toothpick to swirl into batter
Bake muffins for 18-20 minutes, store in airtight container in frjdge
