Beef Tenderloin with sauce Duet

Ingredients

  • 2 Lb beef tenderloin trimmed of fat and silver skin
  • 2 oz dried cherries
  • 1 bottles dancing bull zin
  • 1 bunch tarragon Reserve some for garnish
  • 1 Quart heavy cream
  • 4 oz gargonzola cheese
  • Honey as needed

Preparation

Step 1

Tie and roast tenderloin until medium rare 130 F
While the meat is cooking place wine, tarragon and cherries into a sauce pan, reduce to 1/2 cup liquid, place into a blender and process until smooth, strain back into the sauce pan and add honey as needed to sweeten

In a separate sauce pan add cream and cheese, simmer until cheese has melted. Thicken as needed with corn starch

Serve meat with three puddles of sauce, one red, one white and one mixed.
