Mexican Street Corn

This is so good! I was skeptical by the uncommon list of ingredients but it all came together so well !

Ingredients
- Fresh ears of yellow or bi-color corn, husked and silks removed (leave the stalk on for easier eating)
- Margarine or salted butter
- Mayo (I used Blue Plate)
- Grated Cotija cheese (can use Feta, Queso Fresco, or Parmesan)
- Chili powder combined with a little ground cayenne pepper
- Chopped cilantro for garnish, optional
- Fresh lime wedges, for serving

Preparation
Step 1
Cook cleaned ears of corn as desired. (I boiled it, then lightly buttered it and seared briefly in a hot skillet).
When corn is done:
1) Lightly butter the corn.
2) Using a butter knife, spread a light coat of mayo over top of corn.
3) Sprinkle grated cheese on top.
4) Sprinkle with chili powder mixture.
5) Garnish top with cilantro.
6) Serve immediately with a squeeze of lime juice.
