Brussel Sprouts with Cheese Sauce

Ingredients

  • 1 pound Brussel sprouts trimmed and cleaned. (If large, cut in half)
  • 1 tbsp. fresh lemon juice
  • 2 tbsp. unsalted butter
  • 2 tbsp. flour
  • 1 cup milk
  • 1/4 cup shredded cheddar cheese or Velveeta( cut into cubes)
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. nutmeg
  • Pinch cayenne pepper

Preparation

Step 1

1.Preheat oven to 350
2. Place brussel sprouts in saucepan with enough water to cover, add lemon juice. Simmer uncovered 8-10 minutes until tender, drain
3.Meanwhile, melt butter in sauce pan. Stir in flour, cook 1-2 minutes. Gradually add milk, cook, whisking until sauce thickens about 2 minutes. Stir in cheese, salt, nutmeg, pepper and cayenne and whisk till smooth.
4. Add Brussel sprouts and cheese to 1 quart baking casserole dish, toss brussel sprouts with cheese.
5. Bake for 20 minutes or until heated through and bubbly
6. Serve
