Grilled Eggplant & Green Onions in Soy Dressing

Ingredients

  • Dressing:
  • 3 T olive oil
  • 2 T soy sauce
  • 1 T rice wine vinegar
  • 1 T parsley
  • 2 t minced ginger
  • 1 t sesame oil
  • 1 t minced garlic
  • 1/2 t ground pepper
  • 2 med eggplants, sliced crosswise
  • 1 t salt
  • 10 green onions, cut into 6" spears
  • 3 T olive oil
  • 2 t toasted sesame seeds

Preparation

Step 1

Combine dressing ingredients in large bowl. Toss eggplant with salt; let stand 30 min. Rinse & at dry.

Brush eggplant with oil; grill until golden brown, 5 min. per side. Grill green onions 1-2 min per side. Add to dressing and sprinkle with toasted sesame seeds
