Ingredients

  • 1 lb fresh shrimp
  • 2 T soy sauce
  • 3 T cornstarch
  • 1 small can sliced pineapple
  • 1 green pepper, cut in strips
  • 1/2 c packed brown sugar
  • 1/2 c vinegar
  • 1 tomato cut in wedges
  • 1 1/4 c water
  • rice

Preparation

Step 1

Cook shrimp in boiling, salted water for 3-5 minutes, or until done. Do not overcook. Shell, devein shrimp. Drain pineapple, reserving juice in saucepan. Cut pineapple slices in 1/2, set aside. Add brown sugar, vinegar, soy sauce, 1 c water to pineapple juice. Bring to boil. Combine cornstarch, 1/4 c water. Add to syrup mixture. Cook, stirring constantly until thickened. Add green pepper, pineapple and tomato wedges. Cook for 5 minutes. Add shrimp, Heat through. Serve immediately over rice
