    (6 oz.) jars marinated artichoke hearts, undrained

  • 3

    green onions, chopped

  • 1

    clove garlic, crushed

  • 4

    large eggs

  • tsp pepper

  • 2

    cups (8oz) shredded sharp cheddar cheese

  • 6

    saltine crackers, crumbled

  • 2

    T chopped fresh parsley


Drain artichoke hearts, save liquid. Chop artichokes and set aside Pour artichoke liquid into 9 inch skillet. Add green onions and garlic and saute until tender. Drain. Combine eggs and pepper in bowl and beat well. Stir in artichokes, onion mixture, cheese, crackers, and parsley. Pour mixture into a greased 8 inch square baking dish. Bake at 325 degrees for 35-40 minutes or until set. Cut into 1 1/2 inch squares Yield: about 2 dozen
