Curried Quinoa With Cauliflower

Quinoa with cauliflower, peas, carrots, ginger, and curry makes a delicious meatless meal. Top with yogurt and toasted almonds before serving.

Ingredients
- 2 Tbsp Canola or Olive Oil
- 1 Medium Onion, chopped
- 3 cloves Garlic, minced
- 1 Tbsp Minced Fresh Ginger
- 1 Carrot, cut into 1/2" half-moons
- 1 Small Head Cauliflower, broken into small florets
- 1/4 tsp Salt, or more to taste
- 5 tsp Curry Powder
- 1/4 tsp Cayenne Pepper
- 1 cup Water
- 1 cup Frozen Peas
- 1 cup Quinoa, preferably no-rinse variety
- Plain Yogurt & Toasted Slivered Almonds, for garnish

Step 1
Heat olive oil in a large skillet. Add onion, garlic, ginger, and carrot; cook over medium heat for 5 minutes. Add the cauliflower, salt, and spices, and cook another minute. Add 1 cup water, then cover and simmer for 12-15 minutes, until vegetables are tender. Add the peas during the last minute of cooking. Meanwhile, cook quinoa according to package directions. Mix the curried vegetables into quinoa and serve. Top with nonfat yogurt or raita, and toasted slivered almonds.
