Broccoli Cheese Casserole

Ingredients

  • For topping:
  • 2 packages of frozen broccoli florets
  • 1/2 cup of mayonnaise
  • 2 tbsp. of chopped onion
  • salt and pepper to taste
  • 2 whole eggs
  • 1 can of cream of mushroom soup
  • 2 cups of shredded cheddar cheese
  • 1 cup of plain bread crumbs
  • 1/2 stick of butter

Preparation

Step 1

Broccoli in microwave covered for 3 minutes, stir and micro 1 min more. drain well. In a separate bowl, beat eggs and stir in mayonnaise, mushroom soup, diced onions, cheddar cheese, salt & pepper.
Fold in broccoli.

Bake at 375 for 40 minutes. Meanwhile prepare topping. In a small skillet melt butter and add bread crumbs. Stir until golden brown.

When casserole is finished baking add toasted topping and serve.
