Beet Salad with Blue Cheese & Candied Pecans

Ingredients
- 1 32 oz. jar of pickled sweet beets
- 1/2 tsp. salt
- 10 oz. mixed greens with arugula
- 2 Romaine lettuce bunches sliced
- 1/2 medium red onion
- 1 c crumbled blue cheese or feta cheese
- 1 c. candied pecans
- 1/4 c olive oil
- 2 T sweet pickled beet juice

Preparation
Step 1
Drain beet juice and set aside. Cut beets into halves. Toss with olive oil, salt and beet juice. Combine the lettuce, beets, and choice of cheese with olive oil and sprinkle with candied pecans. Season with black pepper.
