BEET PICKLES WITH HORSERADISH

- 7 quarts (28 cups) beets (cooked and put through food chopper)
- 1 cup horseradish ( I use prepared Horseradish)
- 4 cups white sugar
- 4 cups white vinegar
- 2 Tablespoons salt
- 2 Teaspoons pepper
Mix white sugar, vinegar, salt and pepper and bring to a boil. Mix the shredded beets with horseradish and add to the vinegar mixture, bring to a boil and mix well. Fill sterilized jars and seal.
NOTE; YOU CAN MAKE HALF THE RECIPE AND ADD HORSERADISH TO SUIT YOUR TASTE.
