Simple Pumpkin Tiramisu

Ingredients

• 1 1/2 cups chilled whipping cream
• 3/4 cup sugar
• 8 oz marscarpone cheese
• 15 oz can pure pumpkin
• 3/4 tsp pumpkin pie spice
• 6 oz soft ladyfingers
• 1/4 cup rum
• 2 oz crushed amaretti cookies

Preparation

Step 1

Beat whipping cream and sugar until peaks form. Add cheese, pumpkin and spice until smooth. Line bottom of 9-inch springform pan with ladyfingers, overlapping and crowding to fit. Sprinkle with half of rum. Spread half of filling over ladyfingers. Repeat with second half of ladyfingers, remaining rum and filling. Wrap tightly in plastic wrap and chill overnight. To unmold, run knife around inside edge of pan. Release pan sides and sprinkle with amaretti cookies.
