Creamy Lemon Parmesan Chicken

Ingredients

  • 4 boneless/skinless chicken breasts
  • 2 T Flour
  • 2 T finely grated fresh Parmesan cheese
  • 1 t salt
  • cracked pepper
  • light spray of cooking oil
  • 1 T olive oil
  • 2 T butter2T minced garlic
  • 1 1/4 cup chicken broth
  • 1/2 cup milk
  • 1/3 c finely grated fresh Parmesan cheese
  • 2 t capers
  • 1 t cornstarch - mixed with 1 T water?
  • 2-3 T lemon juice
  • 2 T fresh parsley

Preparation

Step 1

Spray pan/skillet with a light coating of Pam
Combine the flour and Parmesan and coat chicken breaths
Heat 1 T oil and 2 t butter until melted and pan is hot. Fry the chicken until center is light pink (3-4 minutes). Add garlic to the oil in pan, spray withPpam. Reduce heat to low-medium heat. Season with salt and pepper.
Simmer for about 2 minutes until thicker.
Pour the lemon juice, allow to simmer for a minutes and pour onto serving dish. Garnish with capers and lemon slices.
