Low Fat Cheese and Broccoli Soup

This soup has all the creaminess you expect from a classic cheese-broccoli soup, but so much less saturated fat and cholesterol.

Ingredients
- 2 1/2 cups fat free, low sodium chicken broth
- 2 cups chopped fresh broccoli, or 1 (10 oz. package) frozen chopped broccoli, thawed
- 1/4 t. salt
- 1/4 t. pepper
- 1/8 t. ground nutmeg
- 1 cup fat free half and half
- 3 T. flour
- 1/2 c. low fat sharp cheddar cheese, shredded

Preparation
Step 1
In a large saucepan, stir together the broth, broccoli, salt, pepper, and nutmeg. Bring to a simmer over medium high heat. Reduce the heat and simmer covered for 6-8 minutes, or until the broccoli is tender.
In a small bowl, whisk together the half and half and flour. Stir into the saucepan. Simmer for 1-2 minutes or until thickened stirring constantly.
Add the cheese. Remove from heat, stir until cheese is melted.
