Mashed Sweet Potatoes

Ingredients
- Candied Pecans:
- Sweet Potatoes 4 ea
- Heavy Cream 1 cup
- Butter 1 stick
- Kosher Salt 2 tsp
- Pecan Halves 2 cups
- Egg whites, LG 1 ea
- Smoked Paprika 1/4 tsp
- Cayenne Pepper pinch
- Sugar 1 Tbsp

Preparation
Step 1
Clean and peel the sweet potatoes.
Dice the sweet potatoes into 1” pieces
Combine all ingredients in a medium saucepan.
Place the saucepan over medium heat and cover.
Simmer the sweet potatoes until tender (about 25 minutes).
Using a potato masher, mash all ingredients together.
Taste and add salt if necessary.
Place the sweet potatoes in a serving dish and top with the spiced pecans (recipe below).
Spiced Pecans:
Preheat oven to 300° F.
Whisk egg whites until foamy. Add sugar and spices. Mix well.
Using a fork, place in a single layer on a sheet pan (lined with foil or parchment) and bake 30 minutes or until golden brown.
Chef's Note: This recipe makes more Spiced Pecans than you will need for the sweet potatoes. They are a delicious garnish for salads and will hold for three days in an airtight container.
