Ingredients

  • 2 c. sugar
  • 1/2 c. flour
  • 1/4 c. + 2 T. cornstarch
  • 1/2 tsp. salt
  • 4 c. water
  • 6 eggs
  • 2 T. butter
  • 1/2 c. key lime juice
  • 2 9" pie crusts, baked
  • 1/2 tsp. cream of tartar
  • 3/4 c. sugar

Step 1

Preheat oven to 425°. Separate the eggs, Beat egg yolks and set whites aside. Combine sugar, flour, cornstarch and salt in a saucepan. Gradually stir in water. Cook over medium heat until thickened. Gradually stir cooked sugar mixture into beaten egg yolks, beating constantly, for 2 minutes. Stir in the butter, lime juice and lime zest. Let mixture cool slightly. Beat egg whites until light and frothy. Add cream of tartar and continue beating until stiff peaks form. Gradually beat in the remaining 6 T. sugar and beat until the meringue is stiff and glossy. Pour filling into pie shell. Pile meringue on top, spreading it until it touches the edges of the pastry to prevent the meringue from shrinking. Bake at 425° for 5-6 minutes or until meringue is golden brown.
