Roasted Califlower with Dates and Pine Nuts

This is Claire Robinson's recipe from the Food Network Magazine. Figured I'd give credit where credit is due.
Ingredients
- 1 large head of cauliflower, cut into florets
- Kosher salt and pepper to taste
- 4 tbsp unsalted butter
- 1/3 cup pine nuts
- 1 clove of garlic, minced
- 1/2 cup pitted dates, coarsley chopped

Step 1
Preheat the oven to 425 degrees.
Spread the cauliflower on a baking sheet and season with the salt and pepper. Roast in the oven, tossing once with a spatula for 20 min or until golden brown at the edges.
Melt the butter in a small skillet over medium low heat. Add the pine nuts and cook, stirring frequently until they're light, golden brown, about 5 min. Add the garlic and dates and cook until they're softened, 2 to 3 minutes more. Season with salt.
Transfer the cauliflower to a serving bowl and drizzle with the pine nut mixture. Toss to combine. Taste and adjust the seasonings if desired. Serve warm or at room temperature.
