Ingredients
- 1 cup cold water
- 2/3 cup raisins
- 3/4 cup sugar
- 1 cup grated carrots
- 1/4 cup oil
- 1/2 tsp. salt
- 2 cups flour
- 1 1/2 tsp. baking powder (level)
- 1 1/2 tsp. baking soda (level)
- 1/4 tsp. cinnamon

Preparation
Step 1
Boil water, raisins, sugar, carrots, margarine and salt for 5 minutes. Cool.
Stir in dry ingredients until well mixed.
Bake in a loaf pan for 40-45 minutes at 350 deg.
Bake 2 small loaves for 35-40 minutes at 375 deg.
Do not overbake.
