Ingredients
- 1 large tomato, diced
- 1/2 med red onion, finely chopped
- 1 sm red pepper, finely chopped
- 1 jalapeno pepper, finely chopped
- 2 tbsp chopped green onions
- 2 tbsp chopped fresh parsley
- 1/4 cup canola oil
- 1/4 cup unseasoned rice wine vinegar
- 1/2 tsp sugar
- salt and pepper
- 2 15oz cans black eyed peas, drained

Combine 1st 6 ing in bowl. In seperate bowl, whisk tog the vinegar, oil, sugar, salt & pepper. Toss all together and marinate up to 8 hours in fridge before serving...
