Ingredients
- Coarse Salt
- 6 bunches baby carrots (about 2 lbs), peeled and trimmed
- 2 tbs unsalted butter
- 2 pieces (2 inches) peeled fresh ginger; cut into thin matchsticks
- 3 tbs honey

Preparation
Step 1
Bring med pot of salted water to a boil. Add carrots. Reduce hat, and simmer until almost tender, 3-4 min. Drain. Melt butter in large skillet over med-hi heat. Add ginger; cook, stirring occ until softened, about 2 min. Add carrots, honey and ½ tsp salt. Cook, stirring occ until carrots are glazed, 4-5 min.
