Loaded Chicken & Potato Casserole

Ingredients

  • Topping:
  • 1-2 1-2 Chicken breasts, cut into 1 inch cubes
  • 8-10 Medium 8-10 Medium potatoes, cut into 1/2 inch cubes
  • 1/3 C 1/3 C olive oil
  • 1 1/2 tsp 1 1/2 tsp salt
  • 1 tsp 1 tsp pepper
  • 1 Tbsp 1 Tbsp paprika
  • 2 Tbsp 2 Tbsp garlic powder
  • 6 Tbsp 6 Tbsp hot sauce
  • 2 C 2 C fiesta blend cheese, shredded
  • 1 C 1 C bacon, cooked and chopped
  • 1/2 C 1/2 C green onions, diced

Preparation

Step 1

1. Preheat oven to 500 degrees.

2. Spray 9x13 baking dish with cooking spray.

3. In large bowl, mix together oil, salt, pepper, paprika, garlic powder, & hot sauce.

4. Add potatoes to mixture and stir well to coat.

5. Carefully spoon potatoes to baking dish, leaving behind as much sauce as possible.

6. Bake potatoes 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy/browned on the outside.

7. While potatoes are cooking, add chicken to leftover sauce and stir to coat.

8. Once potatoes are cooked, remove from oven and reduce heat to 400 degrees.

9. Top potatoes with raw chicken.

10. In a bowl, combine cheese, bacon, and onions....mix well.

11. Sprinkle bacon mixture over top of chicken.

12. Return casserole to oven and bake additional 15 minutes, or until chicken is fully cooked and cheese is melted.

13. Serve and enjoy!
