This is a thin, crisp sort of pancake with lots of flavor. For company, it is nice to offer both these and the plump, soft Oatmeal Pancakes. Makes 18-20 pancakes, approximately 4 servings

Ingredients
- 1 cup yellow cornmeal, preferably stone ground
- 1 teaspoon salt
- 1 cup boiling water
- 2 tablespoons (1/4 stick) butter, melted
- 1 egg
- 1 cup buttermilk
- 3/4 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Vegetable oil or bacon fat for frying
