Ingredients
- 2 cups mashed potatoes(homemade or store bought)
- 1/2 cup bacon crumbles
- 1/4 cup chives
- 1/4 cup Parmesan Cheese
- 1 tsp garlic powder
- 1 cup cheddar

Preparation
Step 1
Mix potatoes with all ingredients but the cheddar cheese.
Spray a 12 cup muffin tin or mini muffin tin with cooking spray. Fill each one 3/4 full and make a hole in the middle. Sprinkle cheddar on top of each cup.
Bake the cups at 400 for 30 to 35 minutes until crispy and brown.
Can top with dollops of sour cream if desired.
