TOMATO AND BAGUETTE TART

Ingredients

  • 15 - 1/4 " slices French banquette
  • 15 - 1/4 " slices red heirloom tomatoes
  • 15 - 1/4 " slice yellow or orange heirloom tomatoes
  • 1 t minced garlic
  • 2 TBS melted butter
  • 2 TBS EVOO
  • salt, pepper, red pepper flakes
  • 1 cup shredded Parmesan cheese
  • 3 oz prosciutto

Preparation

Step 1

1. Oven 350 degrees, lightly grease tart pan
2. Mix together melted butter, EVOO, minced garlic and season to taste with salt, pepper and red pepper flakes. Brush one side of each baguette slice. Reserve rest of oil mixture.
3. Layer one baguette slice and one slice of red tomato and one slice of yellow or orange tomato; repeat in a circular pattern to fill tart pan.
4. Drizzle remaining butter-oil mixture over bread and tomatoes. Top with Parmesan.
5. Bake at 350 degrees for 20". While tart bakes, crisp pancetta in oil over medium heat. Garnish tart with crisped prosciutto after removing from oven.
6. Let set 5" before serving.
