Lamb and cucumber kebabs with feta sauce

  • kebabs:
  • 1/2 cup olive oil
  • 1/2 tsp grated lemon zest
  • 1/3 cup fresh lemon juice
  • 3 garlic cloves, minced
  • 2 tbsp fresh oregano
  • 1/2 boneless leg of lamb (3 lbs), cut into cubes
  • 1 cucumber, cut into chunks.
  • salt and pepper
  • sauce:
  • 3 oz feta cheese, crumbled
  • 4 oz greek yogurt
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice

Step 1

Make kebabs:
Combine oil, zest and juice, garlic, oregano and lamb in a large bowl, refrigerate 30 minutes
Make sauce: pulse all ingredients in a food processor until very smooth. Refrigerate.
Heat a grill to medium. Thread lamb and cucumbers onto 8 skewers, season with salt and pepper. Grill 10-12 minutes for medium rare, flipping halfway. Serve with sauce.
