Chive & Onion Hash Brown Potatoes

Ingredients

  • 1 1/2 c half & half cream
  • 8 oz container spreadable chive & onion cream cheese
  • 2 T dried minced onion
  • 1 t salt
  • 1/2 pepper
  • 2 pkgs (20 oz each) refrigerated shredded has brown potatoes
  • 2 c shredded Swiss cheese
  • 3 T minced fresh chives, divided
  • 2 T butter, cubed

Preparation

Step 1

Preheat oven to 375. In Dutch oven combine first 5 ingredients; cook & stir over med heat until blended. Stir in potatoes.

In greased 13x9 in or 3 qt. baking dish, layer a third of the hash brown mixture & 2/3 Swiss cheese; sprinkle with 1 T chives. Repeat layers. Top with remaining hash brown mixture & cheese; dot with butter.

Bake covered 35 min. Bake uncovered 10-20 min longer until edges begin to brown & potatoes are heated through. Let stand 10 min before serving. Sprinkle with remaining chives.
