Ingredients
- 2 cups cooked, mashed potatoes
- 1 cup finely chopped ham, pancetta or canadian bacon
- 1 cup shredded cheese (swiss or cheddar or both)
- 1/2 cup mayonnaise
- 1/4 cup milk
- 1/4 cup minced onion
- 1 large egg beaten
- 1 tsp. prepared mustard
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne pepper (optional)
- 3 +1/2 cups crushed corn flakes
- For Dipping Sauce
- 1/2 cup dijon mustard
- 2 Tbsp. mayonnaise
- 1/3 cup honey
- mix ingredients chill for 2 hours

Preparation
Step 1
Preheal oven to 350F. grease 2-4 baking sheets. Mash potatoes in a bowl. Stir in remaining ingredients and mix well. Shape potato mixture into 1-inch balls. Roll each ball in cornflakes. Arrange the balls 1-inch apart on prepared baking sheets. Bake until browned, about 30 minutes. Serve with dipping sause.
