Ravioli with brown butter & spinach

Ingredients
- 3 T butter
- 2 med. shallots, chopped
- 1 tsp fresh thyme
- 5 oz baby spinach
- 2 tsp sherry vinegar
- 1/4 tsp each salt/pepper
- 1 lb. cheese ravioli (reserve 1/2 cup cooking water)
- 1/4 c pistachios

Preparation
Step 1
1. In skillet, on med. heat, cook butter, shallots and thyme for 8 min. Add spinach and cook until wilted.
2. Remove from heat and add vinegar, salt and pepper. Toss with cooked ravioli and 1/2 cup of cooking water. Garnish with pistachios
