Make-Ahead Golden Mashed Potatoes

Ingredients

  • 6 large potato, preferably Yukon Gold
  • 3 garlic cloves
  • 6 green onions
  • 2 cups regular sour cream
  • 1 1/2 cups grated white or old cheddar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon paprika

Step 1

Peel potatoes, then slice in half. Place with garlic in a large saucepan. Cover with water. Cover and bring to a boil over high heat, then reduce to medium. Boil gently, partially covered, until fork-tender, 20 -25 minutes. Preheat oven to 350. Lightly coat a 9 x 13 baking dish with butter.

Meanwhile, thinly slice onions. Drain water from cooked potatoes and garlic. Return potatoes and garlic to pan. Mash. They taste best left a little lumpy. Stir in onions, sour cream, 1 cup cheese, salt and pepper. Turn into prepared dish. Smooth top. At this point you can refrigerate for up to 2 days.

Cover with remaining 1/2 cup cheese. Sprinkle with paprika. Bake, uncovered, in centre of oven until cheese is melted and potatoes are hot, 30 - 40 minutes.
