Chili Roast Potatoes

  • 1 pound small new potatoes, scrubbed
  • 2/3 cup vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon caraway seed
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh basil

Preparation

Step 1

Cook potatoes in a saucepan of boiling water for 10 minutes. Drain thoroughly.

Pour a little of the oil into a shallow roasting pan to coat the bottom of the pan. Heat the oil in a preheated 400 oven for 10 minutes. Add the potatoes to the pan and brush them with the hot oil.

In a small bowl, mix together the chili powder, caraway seeds and salt. Sprinkle the mixture over the potatoes, turning to coat them all over.

Add the remaining oil th the pan and roast in the oven for about 15 minutes or until the potatoes are cooked through.

Using a perforated spoon, remove the potatoes from the oil, and transfer to a warm serving dish. Sprinkle the chopped basil over the top and serve immediately.
