SWEET POTATO FRIES

Ingredients
- 2 sweet potatoes (you will need two sheet pans)
- 2 tbs corn starch (corn flour)
- 2 tbsp olive or vegetable oil
- Half tbsp garlic powder
- 1 tbsp smoked paprika
- Salt and pepper
- Optional Dip
- 2 heaped tbsp Greek yoghurt
- 1 garlic clove (crushed)
- Half lemon juice squeeze
- Salt and pepper

Preparation
Step 1
Peel the potatoes (or wash them well and keep skin on)
Trim off a slight piece on the bottom, so the potato doesn't roll. Then slice lengthwise into approx 5 pieces and then slice lengthwise again into approx 4 pieces. You should have what looks like large French fries.
Place them in a mixing bowl and add the corn starch. Mix well until each piece is nicely coated.
Add the oil, garlic powder, smoked paprika and salt and pepper. Mix well.
On two baking sheet pans (trays) place anon stick mat or parchment paper.
Arrange your potato batons nicely ensuring they are not touching each other.
Bake in pre-heated oven for 30 min at 350°F - 180°C or until golden brown.
Optional Dip
Mix all ingredients in a bowl.
