Squash and Zuchinni Cake

Ingredients
- 3 medium zuchinni
- 3 yellow suash
- 1 cup of toasted bread crumbs
- 1 cup shredded parmesan
- 1/3 cup of minced Vidalia onions
- 1 large egg, lightly beaten
- 1 1/2 teaspoons dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon of ground black pepper
- 1/2 cup (1 stick) butter
- 1 jar of store bought marinara sauce

Preparation
Step 1
Grate zuchinnin and squash with fine grater. Press between paper towels to remove excess moisture.
In medium bowl, combine grated zuchinni, squash, and the next seven ingredients. Next shap the mixture into 2-inch patties, pressing together firmly.
In large skillet, melt butter over medium heat. Cook squash zuchinnin cakes for 3 to 4 minutes per side until lightly browned.
Place on serving platter and serve with marinara sauce.
