Lemon Wafers with Lemon Glaze

Ingredients
- 1/2 cup butter room temperature
- 1 cup granulate sugar
- 1 large egg
- Zest from 1 lemon divided
- 2 tablespoons lemon juice
- 2 cups all purpose flour
- 2 tablespoons corn starch
- 3 tablespoon icing sugar
- 1/2 teaspoon baking soda
- For the Glaze
- 3/4 cup icing sugar sifted
- 1 1/2 tablespoons lemon juice, divided

Preparation
Step 1
In a bowl, beat butter and sugar until smooth. Beat in egg half the lemon zest and 2 tablespoons of lemon juice until mixture is creamy.
Sift together flour, icing sugar, cornstarch and baking soda and slowly stir into wet mixture until corporated. Beat 15 to 20 seconds. Divide into thirds and wrap each portion into a small log shape. Chill until ready to bake.
Preheat oven to 350. Line cookie sheets with parchment paper. Cut 1/4" inch thick slices from each dough log and place on cookie sheets. Bake 10 to 12 minutes, and then remove to cool on rack.
Meanwhile, make the glaze by mixing together icing sugar, remaining lemon zest and 1 1/2 tablespoons of lemon juice until creamy. Apply glaze to cookies. Let glaze set for 30 minutes.
Makes 36 cookies.
