Lemon Pepper Chicken

Pretty good even though the oven filled with smoke. (Chicken wasn't burned. It was moist. I might through a little garlic in it next time.)

- 2 boneless chicken breasts
- 1 1/2 tablespoons ghee (or butter)
- 1 lemon, preferably Meyer, zest only
- Hefty pinch of salt
- Pepper, to taste

Preparation
Step 1
Preheat the oven to 450°. In a small casserole dish, lay the chicken breasts flat, dot with ghee (or butter), sprinkle with lemon zest, and liberally season with salt and pepper.
Roast for 20 minutes. Allow chicken to rest for up to 15 minutes before serving.
