  • Lemon Glaze:
  • 1 (15-18 OZ) BOX butter-flavored or yellow cake mix
  • 8 ounces cream cheese, softened
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 cups blueberries
  • 1 lemon, juice of (optional)
  • 1 cup powdered sugar (optional)

Preparation

Step 1

1 Preheat oven to 325 degrees. Lightly grease and flour a 10-inch tube pan.
2 Combine cake mix, cream cheese, oil and eggs. Beat until very smooth. Gently fold in berries. Spoon into prepared tube pan and bake for about 1 hour, until a toothpick inserted in the center comes out clean.
Option:
Mix the glaze and drizzle over cake.
