Tuna Balls in Wine Sauce

Ingredients
- 5 tbsp bread crumbs
- 10 tbsp chicken broth
- 6 tbsp dry white wine
- 6 1/2 oz can white meat tuna packed in water; drained and flaked
- 1 egg; hard boiled, finely chopped
- 3 tbsp minced parsley
- 2 lg cloves garlic; minced
- salt
- freshly ground pepper
- flour for dusting
- 2 tbsp olive oil

Step 1
In a bowl, moisten the bread crumbs with tbsp of the chicken broth and 1 tbsp of the wine. Mix in the flaked tuna, hard-boiled egg, beaten egg, parsley, garlic, salt, & pepper. Form the tuna mixture into 1 1/2 inch balls and dust with flour. Heat the oil in skillet and brown the tuna balls on all sides. Add the remaining 5 tbsp of wine, the remaining chicken broth and salt. Cover and simmer for 30 minutes. The tuna balls seem to absorb a lot of liquid during cooking, so add more chicken broth if needed.
