MARBLED CRANBERRY/RASPBERRY MOUSSE
By Lutie
Found this recipe in a magazine about 20 years ago. It started a new Thanksgiving and Christmas tradition by request. Before the introduction of this mousse, my mother used to make an orange jello mold with shredded carrots and crushed pineapple for holidays. If I figure out how she made it, I will write up the recipe.
Ingredients
- 1 1/2 Cups cranberry juice cocktail
- 1 3 oz. pkg. raspberry gelatin
- 1 can (16 oz.) jellied cranberry sauce
- 1 Cup heavy cream, whipped
- 1 Cup fresh raspberries (optional)

Preparation
Step 1
In medium saucepan, bring cranberry juice to boil. Remove from heat and stir in jello until dissolved. Let cool. In large bowl beat cranberry sauce with electric mixer until smooth. Add gelatin mixture to cranberry sauce. Refrigerate overnight.
In glass serving bowl, spoon cranberry mixture into bowl in dollops, alternating with whipped cream, creating two or more layers. Run long knife blade through to create marbled effect. Sprinkle fresh raspberries over top. Keep refrigerated until ready to serve.
